Superfood Chocolate Peanut Butter Cups
makes 8 large peanut butter cups
Peanut Butter Filling
1/3 cup almond meal
½ cup peanut butter
½ teaspoon salt
-Line a muffin tin with eight paper cupcake liners
-Put all superfood chocolate ingredients into a small saucepan and heat over low heat until all ingredients are melted and combined
-While the chocolate heats up, stir together all peanut butter filling ingredients in a bowl until well combined then put the bowl into the freezer so the filling will harden up a bit
-Spoon about a teaspoon of the chocolate into each liner (just to cover the bottom) and put into the refrigerator for a minute or two (it sets quickly because of the coconut oil)
-Scoop about a tablespoon of peanut butter mixture into your hand, flatten it into a disc shape and place a disc into each cup
-Evenly divide the rest of the melted chocolate between each cup, spooning it over the peanut butter filling
-Put in the refrigerator to set (or the freezer if you’re sort on time)
