Every now and then, we like to treat ourselves to a decadent snack. These sandwich cookies are definitely a sometimes food, but they're a far cry from sugar-packed packet cookies.
The biscuits are a delicious almond meal-based recipe, boosted with our Daily Protein. The filling is silky and sweet complements the crunchy cookies perfectly. Enjoy!
Healthier Protein Sandwich Cookies with Chocolate Silk Filling
makes 4 sandwich cookies
Almond Meal Protein Cookies
1 cup almond meal
21g/1.5 tablespoons butter
1 tablespoon honey/agave nectar/maple syrup (whichever you prefer – or you can leave it out entirely)
¼ teaspoon vanilla
1 scoop Activated Nutrients Raw Cacao Daily Protein
2 tablespoons peanut butter
1. Preheat oven to 160C/325F and line a baking sheet with baking paper or a silicon liner
2. Beat butter until smooth then add all other ingredients
3. Roll into 8 equally-sized balls, place them the lined baking sheet
4. Flatten each ball into a disc
5. Bake for 10 minutes then allow to cool
Chocolate Silk Filling
Half a very ripe banana
2 teaspoons cacao powder
21g/1.5 tablespoons butter or coconut oil
1/8 teaspoons sea salt
1 date
1 tablespoon peanut butter
1 tablespoon almond meal
