Amy Lee is one of our favourite people! She's a genius when it comes to healthy snacks and this recipe (featuring our Daily Superfood for Women) is no exception!
Superbar for Superwomen // Activated Nutrients Energy Bars
Makes 8 bars
1 heaped cup dates, pitted (I used Deglet)
1 cup raw almonds
1 1/2 cup rolled oats (130g)
8 servings of Activated Nutrients Daily Superfood (32g)
Dash of salt
1/4 cup maple syrup or rice malt syrup
1/4 cup (64 g) Natural Peanut Butter (or nut/seed butter of choice)
-Process dates in a food processor until it forms a date paste (Mine rolled into a ball.)
-Optional: Bake the oats and almonds at 150 C for 10 minutes or until they turn golden. Turn half way through with a spatula.
-Combine all dry ingredients and dates in a large bowl, breaking up the dates to evenly mix throughout.
-Gently heat the syrup and nut butter in the microwave, combine. Pour and mix over dry mixture.
-Thoroughly press and flatten mixture into a lined brownie dish; to ensure it holds together.
-Place in the freezer to firm for 15 minutes, then remove and chop into 8 rectangle bars.
Storage: airtight container for a week, (perfect for meal prep!) or a freezer for extra freshness
